Chef Bruce Domain... La Case de L'Isle, St Barts

The Hotel Saint Barth Isle de France has one of the best restaurants anywhere and not just for its food. The view is delectable and the Chef is Hollywood handsome! La Case de l'Isle is one of the best restaurants on the island. With silver candlesticks and wonderful cuisine this intimate restaurant, just 20 ft above a combed and groomed beach, is unique.

We enjoyed lunch literally on the beach. The restaurant has several tables under umbrellas on the sand just a few steps away from the most crystal clear water you could ever imagine. As super models were being photographed a little way down the virtually deserted beach, we dined on outstanding house specialties.

Lobster Spring rolls with mint and coriander, homemade Gazpacho with a mousse of herbs, garlic and basil, Ribs in Barbeque sauce with stack of Fries all served with flare and style. We were treated to Chef Bruce Domain's signature dish…Duck confit slowly roasted in a pot with foie gras sauce and baby vegetables, just delicious!

Having spent seven years on the island, the last three have been as Executive Chef at this intimate hide-away. With St. Barts as his adopted home, Chef Bruce acquired his love of cooking from his mother while growing up in the French countryside. He attended culinary school in Marseille. He used the Michelin guide to determine where to find work and more importantly to learn the best techniques.

His wonderful talent has found a unique home in this lovely boutique hotel and restaurant. His love of the work, the product and constant raves from guests, encourages him to continue creating a culinary experience as magnificent as the surroundings!
