Silver Shadow Chefs
SILVERSEA Corporate Chef Franck Garanger and Executive Chef Martial Poilbout make dining on the Silver Shadow special.
As Corporate Chef of a fleet of exclusive floating resorts, Franck Garanger draws upon years of experience, working with some of Europe's top chefs. A native of Angers, in the Loire Valley, Franck grew up learning the discipline and nature of cooking from his father, in the family's bakery.
After apprenticing as a cook in one of Michelin's highly rated restaurants in Angers, Franck went on to reach the finals of the French national competition for apprentice chefs in 1986.
Franck has worked at a number of prestigious hotels, including the Palace Hotel on the French Riviera, the Hotel De Paris in Monaco and the Hotel du Cap Eden Roc at Antibes. After joining Silversea Cruises in 1994 as a Pastry Chef, he progressed to Saucier, Sous Chef, and Executive Chef. He was promoted to the position of Corporate Chef in 1999.
Chef Martial Poilbout, the Silver Shadow's Executive Chef, works closely with Chef Garanger to implement an on board dining experience that is thrilling!
Chef Martial comes from a small medieval village in Bretagne, France. Martial was 18 years old when he decided to move to Paris, where he attended the Lycee Hotlier de Dinard. After Paris, he had several working experiences in London and in 1995 he decided to "set sail" and was hired by Renaissance Cruises. Within a year he was promoted to Executive Chef. Martial then joined Silversea Cruises aboard the Silver Wind and trained for the Executive Chef position. He is now responsible for overseeing every aspect of dining on the Silver Shadow.
While on vacation and away from the Silver Shadow, Chef Martial loves to spend his time at home, enjoying fine food with friends, going fishing in one of the nearby rivers or spending lazy days on the South East Coast of France. He enjoys visiting markets in exotic ports of call, adding fresh ingredients with local flavor to the culinary experience on board the Silver Shadow.
